Insalata Caprese is a classic salad from the island of Capri, the fresh ingredients, flavours, capture what Campania’s food is all about.
INGREDIENTS

1 lb 2 oz/510g Ripe Plum Tomatoes, cut into slices
Extra Virgin Olive Oil for drizzling
1 lb 2 oz/510g Mozzarella Cheese, cut into round slices
Oregano
Large Fresh Basil Leaves
Salt & Freshly Ground Black PepperTo Prepare
Layer the tomatoes on a platter, and season with salt and drizzle with a little oil.
Arrange the mozzarella slices over the tomatoes. Sprinkle with oregano and scatter over the basil leaves.
Season well with black pepper and serve.
