Description

Cantine Olivella is situated in the three municipalities of Sant’Anastasia, Pollena Trocchia & Somma Vesuviana, within the Vesuvius National Park, between 300-650m above sea level, producing wines from local grape varieties of Catalanesca &  Caprettone.

The area is protected, making it the ideal location to cultivate un-grafted vines in volcanic sandy soil. Cantine Olivella’s name originated from an ancient spring located on Mount Somma which supplied water to the Royal Palace of the Bourbon Kings.

The Caprettone grape is grown exclusively in the municipalities located on the slopes of Mount Somma–Vesuvius, where it represents the leading grape of the Vesuvio DOC and a key component in the production of Lacryma Christi Bianco, as well as being vinified on its own.

As is often the case with grape varieties named after animals, the origin of the name is likely linked either to the shape of the bunch—resembling a goat’s beard—or to the shepherds who first cultivated it.

The vine has large, five‑lobed, light‑green leaves. The bunch is large, generally loose but occasionally compact, pyramidal in shape and sometimes winged. The berries are small and uniform, slightly round, with a firm, yellowish skin covered by a light bloom. The variety is fairly productive but not very vigorous, and it typically reaches maturity in the second half of September.

Grape Varieties: 100% Caprettone

Vinification: The grapes are hand‑harvested and carefully selected before undergoing gentle pressing. Fermentation takes place in 30‑hectolitre tanks at controlled temperature. The wine is then matured for 4 months on fine lees, enhancing depth and texture, followed by a further 2 months of bottle ageing before release.

Tasting Notes: Fresh and elegant on the nose, Emblema reveals delicate aromas of flowers and fresh fruit. The volcanic, sandy soils impart a distinctive mineral character and savoury depth, while careful vineyard thinning, resulting in lower yields, enhances the wine’s structure, balance, and complexity.

Alcohol: 13%

Serving temperature: 8-10°C

Ideal With: White grilled fish, seafood risotto

Allergens: Contains Sulphites

Sarde Ripiene – Stuffed Sardines
