Description
San Salvatore Calpazio Greco is an organic wine. The vines are situated 150-210m above sea level, in clay and limestone soils.
Vinification: The grapes are harvested by hand and following on from soft pressing of the grapes, the must is fermented for 8 months in steel tanks. After fermentation in stainless steel tanks at controlled temperature, the wine is aged for a year in San Salvatore’s cellars in barrels of 35 hl and barriques.
After a year of ageing the wine is blended and then aged for a further six months in the bottle.
The appearance is pale yellow, on the nose, peach, apricot and jasmine. On the palate there is a distinct minerality, with mandarin, peach and fennel flavours coming through. The wine has a long finish.
