Selvanova’s pale yellow Pallagrello Acquavigna is a dry, white wine that’s ideal with white fish, rabbit, fresh or fragranced cheeses. Pallagrello White is a very rare grape grown only in some municipalities in the province of Caserta on the border with Benevento.

This young , small estate owned by Antonio Buono is located on the Selvanova hill on an altitude of 200m above sea level, facing full south. The soil is deep, prevalently clayous and sandy with a significant limestone component. The climate is typical southern Italy with hot summer days and mild winters. Due to the almost constant breezes, the nights are fresh and dry, and in case of rainfalls, the fruits dry very rapidly because of the heat that is so typical of the southern regions of Italy.

The grapes are hand-picked and selected on arrival at the winery. They are immediately de-stemmed and the skins are separated from the must. The must is then fermented in a vat of steel at a controlled temperature within 18°C to preserve the characteristic aromas of the grape. The malolactic fermentation is done to preserve freshness and salinity.

Bouquet: Melon on the nose, light herbaceous and vegetal notes.

Taste: Clear, lively, elegant and juicy fruit on the palate, dry but also creamy, very elegant, playful acidity, tart mineral notes in the background, very full-bodied, but not heavy, good persistence and has some depth, very good finish.

Alcohol Content: 13.5%
