As with all stories driven at their core by an overwhelming passion, the story of the Chillemi Gianfrotta family tells of a dream that led them to strengthen their bond with their roots—family, culture, and land. Backed by a noble lineage officially recognized by King Charles of Bourbon in 1751, the family’s primary goal from the very beginning of the enterprise has been to enhance and honour an extraordinarily rich heritage.
From the outset, it was clear that their work would focus on the most historic and distinctive products of their land, preserving the ancient grape varieties so cherished by the Neapolitan royal court. This led to the exclusive choice of the native varieties Casavecchia and Pallagrello, answering the desire to rediscover a territory of undeniable quality and character.
A living historical memory that perpetuates the ancient bond with the Bourbon royal family, also reflected in the wine labels, which depict the hunting dogs featured in some of the most important paintings displayed at the Royal Palace of Caserta.
Pallagrello is one of the few grape varieties in the world that exists in both white and red forms. A wine so beloved by King Ferdinand IV of Bourbon that he ordered the royal gardeners to include it in the spectacular Vigneto del Ventaglio, located just behind the Royal Palace of Caserta.
Produced in the hilly area of Pontelatone, at the foot of Mount Friento in the Province of Caserta, this wine comes from clay‑rich soils with a notable presence of carbonate elements. The vineyards enjoy a south‑western exposure at an altitude of 200 metres above sea level.
Tasting Notes: Made from 100% Pallagrello Bianco, trained using the Guyot system, with a planting density of 4,000 vines per hectares. The grapes are hand‑harvested in 20 kg crates towards the end of September.
The grapes are brought immediately to the winery and whole‑bunch gently pressed. Fermentation takes place in stainless‑steel tanks at controlled temperature, preserving freshness and varietal character.
Appearance: Medium‑intensity straw yellow with green reflections.
Aroma: Expressive and distinctive, offering notes of melon, almond, broom flowers, and mint.
Palate: Fresh and vibrant, with excellent salinity, good balance, and lively acidity.
Alcohol: 13.5%
Serving Temperature: 10–12 °C
Ideal With: Buffalo mozzarella, seafood dishes, shellfish and crustaceans, and pizza.
