Description

The Aglianico vines which produce Donna Elvira Entonos Campi Taurasini are trellis trained, cane pruned (double branched guyot), with no de-budding but are given a green pruning to improve the canopy microclimate, reducing shoot density. Green harvesting is carried out to improve grape ripening.

The Grapes were cultivated by hand during the middle of October in Montemiletto where the soils are mostly clay & calcareous at an altitude of 400m above sea level from different parcels with various exposures. The grapes are placed in ventilated boxes.

Once at the vineyard, the grapes are placed on a sorting table and only the best grapes are selected. Destemming is done by hand. Fermentation is done at a cold temperature  with maceration lasting approximately 20 days.  Malolactic fermentation takes place in stainless steel tanks. After the first decanting, the wine is transferred to oak barrels where it rests for 12 months. Ageing in the bottle for a further 6 months before release.

In the wine glass, the colour is intense red with bright purple hues. The aromas are intense, complex and consistent. A bouquet characterised by varietal and tertiary notes of violets, morello cherries, and tobacco notes. The taste is full with an elegant spicy presence with a lovely mouthfeel and a substantial long finish.

Alcohol: 14%

We suggest pairing Entonos with first dishes and aged cheeses.
