Description
Donna Elvira Kaysara Rosato is a rose’ wine that is made from the Aglianico grape variety.
The Aglianico vines at Donna Elvira are trellis trained, cane pruned (double branched guyot), with no de-budding but are given a green pruning to improve the canopy microclimate, reducing shoot density. Green harvesting is carried out to improve grape ripening. The grapes were cultivated by hand in the vineyard near the cellar, called Grottoni where the soils are mostly clay & loam at an altitude of 450m above sea level.
Once at the vineyard, the grapes are destemmed, and macerated for about 6 hours and gently pressed. The must is transferred into stainless steel tanks and maintained at a controlled temperature (about 16-18 °C), where fermentation occurs, and lasts about 20 days with no malolactic fermentation. It spends 5 months on lees, in the tank to manage battonge. It is aged in the bottle for one month prior to release.
In the wine glass, the wine expresses fruit and floral scents of red berries and cherry, typical of the Aglianico cultivated in this area of Irpinia.
Rosato is all about freshness, and this is evident with the first taste. It’ a continuous fusion between acidity, sweet sensations, body and volume. The finish is savoury and quite long.
We suggest pairing Kaysara Rosato with tomato-based summer dishes, barbequed meat and fried fish.
